Last weekend our family was in Ithaca for Paige’s graduation from Ithaca College. We had a delicious meal at Madeline’s on The Commons and needed to walk off our dessert. Ithaca has a plethora of hiking options, but we were staying near Cornell’s campus so we chose The Plantations.
The Mundy Wildflower Garden and Herb Garden were beginning to bloom and looked downright magical in the golden hour light.
We spent a long time watching the dozens of turtles and goldfish in the Houston Pond from the bridge. There were some massive creatures living in there!
We were far from the only visitors, with students having picnics and local high schoolers taking prom pictures in various picturesque locations throughout the grounds. For anyone looking for an Ithaca hike that doesn’t involve hundreds of stairs or slippery slate, I highly recommend The Plantations!
Erin was kind enough to take a break from studying for finals to hike in Letchworth State Park with me this weekend. We ventured on the road less traveled and took in some gorgeous views above the gorge on a sunny spring day.
Warmer weather and spring veggies have me craving new, fresh recipes. Here are 6 I’m excited to try this season!
There is nothing I love more than one pot pasta recipes. They’re easy and yummy. This one is filled with tomatoes, pepper, zucchini and more. In a few months, we can make this right out of the garden, but for now the grocery store will do. I’m going to make this my lunch meal prep for the week.
Update: This recipe worked great for a whole week worth of lunches! I used 2 small zucchini, a pint of cherry tomatoes and 16 ounces of whole wheat pasta with 5 1/2 cups of water. Next time, I’ll add even more spices to really jazz things up.
At this time last year, my roommates and I were spring break-ing in Florida, eating fish tacos with mixed drinks at beachfront restaurants. This year, not so much. But that doesn’t mean I can’t enjoy fish tacos at home!
I’m not going to put away the slow cooker just because it’s getting warmer. I’m excited to try this recipe! I love when I can make rice and add whatever has been cooking all day with no effort on my part to make a meal.
This is a great side dish or a main meal. When I made it, I used less scallions and didn’t include dates. The flavors had a chance to blend overnight and it was even better as leftovers.
Everything on Oh She Glows is delicious and unlike some vegan recipes, you can’t tell it’s vegan. I always love the sauces Angela creates and this sun-dried tomato basil-hemp pesto looks amazing.
I love wraps, I love sweet potatos and I love black beans. These wraps look like an easy dinner with enough flavor and filling to make up for the meatless-ness.
The weather has dipped back into the teens, but our early taste of balmy weather has me thinking spring! I love the refreshed feeling that comes with the rainy, warming weather of April and May. There are so many parts of spring that make me happy, from the chicks at Tractor Supply to the days warm enough to take a run in shorts.
Buffalo has so many great restaurants with rooftop patios and outdoor seating that goes to waste for half the year. The first weekend that outdoor tables are set feels like a city-wide party filled with string lights and gorgeous sunsets. This spring, I’m excited to enjoy the patios at Templeton Landing, Deep South Taco and A. B. V.
Last Wednesday I stopped at Tractor Supply solely to check on the chick situation. There weren’t any chicks yet, which meant the time I spent on the drive there crafting an Instagram caption was for naught. But lucky for me and my springtime obsessions with all cute little animals (baby cows, baby bunnies and baby goats 😍), Tractor Supply is both on the way home from work and right next to the gym!
Warmer weather makes me want to never step foot on a treadmill again. I can’t wait until a few miles on the canal doesn’t leave my nose feeling like it’s going to fall off. I know Murphy is excited for days that stay lighter longer so he gets a walk more than once a week. The first few weeks of open windows, open barn doors and no winter coat are always welcome, especially in Buffalo.
While some parts of spring cleaning aren’t so fun, I love taking everything off the shelves to dust and putting photos, books and keepsakes back in a completely new way. I stopped at Target yesterday for face wash and walked out with half the homeware department, I swear. I then spent hours changing out stacks of books and frames. My next step is printing new images for all these frames; currently, I’m looking at a cute child I’ve never seen before eating a dripping ice cream cone.
